Here is my recipe for chicken tacos. Boil and shread up chicken ( you can used whole, legs, thighs or breasts) what ever you like. Put chicken into a skillet and add a packet of taco seasoning and hot sauce or chili powder, and some water. Heat until sauce thickens. Heat corn tortillas in a skillet until soft and pliable. Have on hand some shredded lettuce, cheese, cabbage, chopped onion, tomatoes and radishes. Fill the tortillas with chicken and top with what the teens like. I use two kinds of cheese Mexican Cotija it's a dry smelly yet delicious cheese and Monterrey Jack either spicy or regular. Beans and rice are great for an accompaniment. If you want a somewhat more sophisticated menu try Martha Stewart or Paula Deen their recipes have never failed to impress my family and friends. I have found that almost everyone likes tacos and they haven't failed me yet. Good luck to you in this endeaver and Happy Birthday to your cousin.
One fun thing you could do would be pizza. You can change up crusts (thick, thin, deep dish) you can make them any size you want so you could have 40 small size pizzas with different crusts and toppings. Different sauces (red, white, mustard, etc).

You can make some with adventurous toppings or just luxurious ones (pizza with just a crust brushed with olive oil and herbs, smoked oysters and blue cheese maybe with roasted red peppers is phenomenal). You'll have enough of the things that would definitely suit her tastebuds and you could throw in some fun stuff for her and her friends to talk about and dare each other to eat.
Cheesy Potatoes!!!

My grandma always makes these and they are to die for!

Take a package of cut up hash browns (potatoes)

A large container of sour cream

2 cans of cream of chicken soup

and LOTS of cheeesse!

Mix the hash browns, cream of chicken and sour cream together

Put it in an oven safe dish and sprinkle LOTS of chees on the top, you can even put a layer of cheese half way through

Cook for 60 minutes at 350degrees.

It is sooo cheesey and sooo good, this could be a side dish

Why not have some chicken dish with it, or make it like a buffet and have buffet foods

meatballs in a crock pot

salads

cheesy potatoes

veggies and dip

rice dishes

chicken dishes

this is always a great idea with teens because they can snack and pick and choose what they want to eat!

FUNKY CHICKEN WITH SESAME NOODLES

Lay this out, call them to eat, and watch it get inhaled! They won't stop eating until ti's gone!

1 lb. linguine

陆 cup soy sauce

录 cup toasted sesame oil

1/3 cup white sugar

录 cup peanut butter

3 green onions, sliced diagonally (green %26amp; white parts)

陆 cup thinly shredded cabbage (purple or green)

8 oz. sliced mushrooms

录 cup sesame seeds, or more to taste

录 cup soy sauce

录 cup teriyaki sauce (have subbed hoisin before)

3 garlic cloves, minced or pressed

录 cup brown sugar

2 tsp. fresh ginger, minced (or 陆 tsp. dry)

4 boneless, skinless chicken breasts

Oil for saut茅ing

In a bowl mix the soy sauce, Hoisin sauce, garlic, and the ginger. Add the chicken, making sure it's all coated with the sauce. Cover and refridgerate for 2-3 hours. Remove the chicken from the marinade, and toss out the marinade left at the bottom of the bowl.

Cook the linguine according to package directions; drain, return to pot. In a microwave safe bowl, add the soy sauce, sesame oil, sugar, and peanut butter. Microwave 30-45 seconds, then whisk until well-blended and the sugar and peanut butter has dissolved. Pour this over the cooked pasta. Set aside while you marinate and then cook the mushrooms and chicken.

On high med-heat, add 2 Tbsp oil in a large non-stick pan. Add mushrooms and saut茅 until tender, about 4-5 min. Remove mushrooms from pan and add to noodles. Add 2 Tbsp oil to skillet then add chicken breasts. Saute over high heat, about 6-8 minutes per side (depending upon thickness) until cooked through. Remove chicken to cutting board, and slice into thin strips. (If you happen to see any uncooked meat in the center, you can add it sliced back to the skillet to cook a bit more.) Toss chicken with mushrooms and noodles; add cabbage, green onions, and sesame seeds, and serve in bowls.
